Bariba Bread

One remnant of French colonization in Benin is bread. There are multiple kinds of bread available in the north, but there is one that predominates in Sonsoro. We call it Bariba bread because it is found in Bariba villages. It is baked in large mud ovens and sold for for 20 cents per loaf. Loaves are small, usually 4"x4"x3". When you get Bariba bread fresh, it is delicious. Below are a few pictures.

  1. Might this be a sour dough type bread? Otherwise what is the leavening that's used? Looks delicious! Is there something that is put on the bread or is it eaten plain?

    1. It's good old white bread made with yeast, and it is delicious. I know of at least one shop in my village that sells yeast, but there may be more.

      I don't know what most people do with the bread. Some vendors have margarine or a type of tomato sauce on hand that they will put in your bread for you at your request. I have seen some people just snack on the bread as it is because it's so delicious fresh. We're so lucky to be able to eat warm bread fresh out of the oven. What a treat!

    2. That bread looks like something you would find at Dahl's! By the way, when I was young, a good price for a loaf of white sandwich bread was $.19.
